Directions

Stir the tomatoes, vegetable juice, cucumber, onion, green pepper, garlic, oil, vinegar, black pepper and hot pepper sauce in a large mixing bowl. Cover the bowl and refrigerate for at least 1 hour or until ready to serve.

Ingredients

6 medium tomato, peeled, seeded and chopped (about 6 cups)
1.5 cups V8® 100% Vegetable Juice
1 medium cucumber, peeled, seeded and diced (about 1 1/3 cups)
1 medium onion, finely chopped (about 1/2 cup)
1 small green pepper, finely chopped (about 1/3 cup)
2 cloves garlic, minced
0.25 cup olive oil
2 tablespoons apple cider vinegar
0.125 teaspoon freshly ground black pepper
0.25 teaspoon hot pepper sauce(or to taste)
